Favourite Rhubarb Pie
4 cups rhubarb, chopped
1 ½ cups sugar
3 tablespoons minute tapioca
¼ teaspoon salt
Pastry for 9 inch double crust pie
Preheat oven to 375° F. Combine all ingredients, except pastry, and let sit for 15 minutes. Pour over bottom crust. Cover with top crust and flute edges. Brush top crust with milk and sprinkle with sugar. Place pie on low rack in oven on a cookie sheet to protect from juice boiling over. Bake for 35-45 minutes.
5 Minute Chocolate Mug Cake
(And why is this the most dangerous chocolate cake recipe in the world? Because now we are only 5 minutes away from chocolate cake at any time of the day or night!)
1 large coffee mug (microwave safe)
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Splash of vanilla
In large mug, put flour, sugar, and cocoa; mix well. Add egg and mix thoroughly. Pour in milk and oil; mix well. Add chocolate chips (if using) and vanilla and mix again. Put mug in microwave and cook for 3 minutes. The cake will rise over top of the mug, but don’t be alarmed! Allow to cool a little and tip out onto a plate if desired. Eat! (This can serve 2 if you want to feel slightly more virtuous!)
